Sustainability & Food

Doing small things with great love

Established in 2016, Gerardo's Italian Kitchen, believes that restaurants have the means to be a powerful source of food education. We keep no secrets in our kitchen, creating an open atmosphere for our guests to learn with us as we cook food that is good for the producer and environment.

We proudly use a Valoriani Tuscan wood-burning pizza oven, from the company of Mugnaini.

Committed to helping create a better world through

 sustainable business practices

We are a certified member of the Sustainability Alliance: a collaborative coalition of local non-profits guiding the Sedona/Verde Valley region of Arizona toward a sustainable future.

Slow Food Movement

We value and support the Slow Food Movement Mission of Good, Clean, and Fair Food for all.

Slow Food's philosophy also includes rediscovering and publicizing forgotten foods and practices to protect farmers and traditions across the world. Arizona has three local chapters in Phoenix, Prescott, and Tucson and are always open to new members who would like to help make a difference in the food system of their community.

Raised with Care by Family Farmers – The finest Meats

Niman Ranch and its network of U.S. family farmers and ranchers raise livestock humanely and sustainably to deliver the finest tasting meat in the world. We work with one of the largest networks of small, independent U.S. family farmers and ranchers – 740 and growing.

All our animals are raised outdoors or in deeply bedded pens. We lead the industry in sustainable and humane agricultural practices. Our animals are never given antibiotics or added hormones – EVER and are only fed a high-quality, 100% vegetarian diet. Gerardo’s is proud to serve Niman Ranch pork in our homemade sausage, pizza, and specialty dishes. Website: NimanRanch.com

Supporting Family Farmers and Ranchers Across the U.S.

From the Tres Hermanas Ranch to our Table!

At Gerardo’s, we’re proud to exclusively use Tres Hermanas beef for our meatballs and meat sauce.

At Tres Hermanas Ranch we spoil our cows, raising them humanely and holistically. All of our purebred Angus cattle have been born and raised on our ranch for several generations, assuring you of pure natural beef. We keep a “closed” herd, so there are no open range or stockyard animals.

And because our cows are “Pasture Raised” 100% Grass-Fed & Grass-Finished, never fed any corn, grain or any byproducts, the taste and texture of our beef is incredible!

No Hormones, No Steroids, No Antibiotics,

No Herbicides, No Pesticides

Our Flour

We take much pride in using a flour that is good for our guest's health and the well-being of the environment. We work with King Arthur flour and back their sustainability and social goals, supporting people and the planet.

Improving Northern Arizona's sustainability one bucket at a time! Residential and Commercial Collection Service in Flagstaff, Kachina Village, Sedona, and the Village of Oak Creek.

Recycling and Use of Biodegradable Products

We recycle glass, plastic, aluminum cans, and cardboard. We also use products made out of recycled and biodegradable material, including GreenBox for our pizza boxes.

We want to show how restaurants can use materials for producing less waste and showing how others can do the same. We also only use paper straws as part of Sedona’s “Straw Free” efforts to reduce plastic from landfills.

And we now serve cane sugar and diet, organic cola made by Boylan Bottling for over 100 years. The bottles are recycled locally. Enjoy soda that’s close the nature with old-fashion genuine taste.

No Coca-Cola Products

We are constantly looking for ways to partner with smaller companies and stray away from big corporations. We now proudly serve Boylan Bottling Sodas, cane sugar and diet organic colas made for over 100 years. The bottles are recycled locally. Enjoy soda that’s close the nature with old-fashion genuine taste.

We make our pasta daily

We make our pasta daily, hand making raviolis and lasagna sheets. We use our pasta extruder for linguine, rigatoni, pappardelle, and other specialty pastas.

Fresh homemade mozzarella CHEESE

We make fresh mozzarella in house by using mozzarella curd and hand forming fresh mozzarella balls.

LOCAL SOURCED VEGETABLES

We strive to use fresh vegetables from local farmers. We also buy our spices from Mount Hope, a source for organic and natural tasting spices.

Kiss the Ground - How to Save the Planet

The movie Kiss the Ground: How the Food You Eat Can Reverse Climate Change, Heal Your Body & Ultimately Save Our World

Narrated and featuring Woody Harrelson, Kiss the Ground reveals that, by regenerating the world’s soils, we can completely and rapidly stabilize Earth’s climate, restore lost ecosystems and create abundant food supplies. Using compelling graphics and visuals, along with striking NASA and NOAA footage, the film artfully illustrates how, by drawing down atmospheric carbon, soil is the missing piece of the climate puzzle. This movie is positioned to catalyze a movement to accomplish the impossible – to solve humanity’s greatest challenge, to balance the climate and secure our species future.
